  • You should review your food safety management system annually OR when something changes in your business. For example change of menu, purchase a vacuum packing machine, start doing food deliveries. Each time you make changes log them at the beginning of the document and give it a new date and version number.

  • Allergen information and internal audits were two areas where the majority of business owners indicated that they could make improvements.

  • Keeping the walls, floors and ceilings maintained is not just about looking good. It makes it much easier for staff to clean them thoroughly as there is less likelihood of them harbouring dirt and grease.
